My fave summer on a budget with the kids is the public library programming. There are at least two activities a week that we go to and they are FREE!

struggled on the "low-cal" part of the dessert but here goes:
Angel Food Cake (store bought at my house)
Sliced strawberries (frozen works if in hurry)
Blueberries (frozen works too)
Cool-Whip (can get the low/no fat but ickkkk) :)

You can slice the cake then a dollop of cool-whip and cover with the berries. Or you can cube the cake and layer in a trifle type dish (cake, cool whip, fruit and repeat).

I have done this with yogurt in place of cool whip too but it does not keep well if layered in a dish. Also the kiddos love bananas, peaches etc so sometimes I top the cake and cool whip with a fruit salad type mixture!

My favorite activity on a budget it to hit the beach out here at Ft Gibson lake! I love it. We are just a mile down the road so doesn't even use gas. We go as often as we can. Thanks for the chance! =)DeannaJo

My low cal easy summertime dessert is a fresh fruit salad! Yummy i usually add fresh pineapple, green grapes, red grapes. I also like it w/ grapes, watermelon balls, cantaloupe balls. Light and refreshing! Thanks for the chance~ DeannaJo

My favorite low budget activity in the summer is the beach! Lay in the sun or swim in the waves and hit up the boardwalk or watch free shows here in Hollywood FL..
And my fav Low Calorie desert is..
lettuce wraps!

I've made this before. I love stuff on the grill since it helps not heating up the kitchen using the stove.
Fire-Roasted Nectarines

2 cup(s) strawberries, hulled and coarsely chopped
1/2 cup(s) raspberries
1/3 cup(s) blueberries
2 tablespoon(s) sugar
2 teaspoon(s) finely chopped crystallized ginger
1 teaspoon(s) fresh lemon juice
Salt
4 medium ripe nectarines, cut in half and pitted
Nonstick cooking spray

I've done this w/ peaches as well.

Our favorite Summer budget outing is going to the Como Zoo, here in St. Paul. It's a donation-based zoo, so you can either get in for free (or next to nothing if you decide to drop a little something into their donation box). It's the cutest zoo and always so busy - definitely keeps the little boy entertained with either watching the animals or the people. :)

Fruit Kabobs are always a hit no matter where you go. And they're so beautiful to look at too!! Here's a yummy recipe:
Ingredients

1 medium tart apple, cut into 1-inch chunks
1 medium pear, cut into 1-inch chunks
1 tablespoon lemon juice
1 can (8 ounces) unsweetened pineapple chunks, drained
24 grapes (about 1/4 pound)
24 fresh strawberries

COCONUT DIP:
1-1/2 cups fat-free vanilla yogurt
4-1/2 teaspoons flaked coconut
4-1/2 teaspoons reduced-sugar orange marmalade

Directions:
Toss apple and pear with lemon juice. Divide fruit into 12 portions and thread onto wooden skewers. Combine dip ingredients in a small bowl; serve with the kabobs. Yield: 12 kabobs.

Our favorite summertime activity is going to the local splash-pad in town. Micah loves it and it's very budget-friendly to grab a lunch and go!

My favorite Summer time activity on a budget is to take me and my family to the pool and hang out for the day. I pack up all sorts of snacks, drinks and toys and just have fun. Of course all the drinks and snacks were paid for by using coupons! ; )

Double Fruit Flavored Frozen Pops. I got this recipe from Jello and my kids LOVE them!

1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
1 env. KOOL-AID Orange Flavor Unsweetened Soft Drink Mix
1 cup sugar
2 cups boiling water
2 cups cold water

MIX dry gelatin mix, drink mix and sugar in medium bowl. Add boiling water; stir 2 min. until mixes are completely dissolved. Stir in cold water.
POUR into 12 paper or plastic cups. Freeze 2 hours or until almost firm.
INSERT wooden pop stick or plastic spoon in center of each cup. Freeze 3 hours or until firm. Remove from cups before serving.

Low cal dessert~
Strawberry Shortcake

individual angel food cake with sliced strawberries and cool whip on top. You can use cool whip lite. This is my DD's favorite dessert.

Another low-cal treat is to freeze Yoplait Whips yogurt. Yummo! Key Lime is my favorite then the chocolate raspberry.

A low cal dessert~

Salad Pops

Ingredients

* 1/2 cantaloupe
* 2-3 cherry tomatoes
* 1/4 cup chopped mint (or basil or lemon balm)
* 1-2 cup plain yogurt

Directions



1. Blend the cantaloupe and cherry tomatoes in a blender until they're still sort of chunky.

2. Add the chopped mint (or basil, or lemon balm) and the plain yogurt and stir until incorporated.

3. Freeze mixture in your popsicle mold.
